Heritage Oaked Doug Fir Gin
Finished Heritage Doug Fir Gin is finished using hard-toasted American oak chips for a period of 2-4 months. Finishing occurs in stainless steel vats to avoid flavor contamination from used oak barrels and to allow the distiller to determine the perfect time to stop the steeping process.
The secondary use of oak chips dramatically dimensionalizes the Doug fir component in the gin, adding warm tannins and spice to the finish.

while i like the taste of the regular heritage doug fir gin, i've always found the mouthfeel to be a bit heavy and oily. aging it in oak barrels fixes this problem and adds a depth to the finish that is really nice. we usually drink this straight over ice (or stirred with ice and served up), but it also makes a really good martinez.
